Intelligentsia (http://intelligentsiacoffee.com/) does not sell their special or espresso coffees green; but they do sell their regulars in this form. These coffees are well worth trying, since they have been selected by Geoff Watts, one of the best coffee cuppers in the world. Geoff, like all top tasters, has a ruthless nose for flawed coffees; but combines this with a broad respect for the tastes of all origins and roast levels, and a liking of unusual coffees. One never quite knows what to expect of him. In any case, these two Centrals of theirs I roasted recently are clearly Centrals in taste, but a far cry from the "Classic Cup" profile of Panama or Costa Rica. The El Salvador "Los Inmortales," a 100% Bourbon from the Santa Ana region is a rare treat, reminiscent of a tart, with baked pear and apple flavors on top, a very buttery mouthfeel, and a lush short crust & filbert roast taste. There are some Nicaraguan coffees with a similar taste, but this one adds a lovely and powerful jasmine and lemon blossom aroma, and a crisp acidity without sourness. Geoff recommends a first pops of the second roast, but I preferred the light City cupping roast for its more powerful aroma. This coffee is not suitable for espresso blending.
